This is a recipe that we do each summer - several times☺️ - since I first read about it in a Swedish food magazine, think it was almost twenty years ago. We really love the combination of fresh fruit, spicy chicken and mango sauce and then the ease to make. The origin recipe is made by talented and lovely Swedish chef/baker Leila Lindholm, @leilalindholm.

Barbecue chicken, serves 4
2 garlic cloves
1 piece of fresh ginger (root)
3 tbsp. catchup
3 tbsp. Japanese soya
2 tbsp. honey
3 tbsp. sesame oil (we love, so we always ad extra)
1/2 kg chicken thigh cutlet
Grate garlic and ginger finely and mix together with the other ingredients. Marinade the chicken approximately two hours in the sauce. Keep in the fridge.
Mango sauce
3 dl Turkish/Greek yoghurt
4 tbsp. mango chutney
Zest from one lemon
2 tbsp. olive oil
Fresh black pepper
Mix up all ingredients to the sauce
Melon salad with mint leaves
1 watermelon
1 papaya
2 avocados
1 cucumber
1 sheaf of mint
3 tbsp. olive oil
2 lime (only the juice)
Flaky sea salt
Fresh black pepper
Take away the core, and slice the cucumber into 1/2 moons. Mix salad ingrediens, use the watermelon shell as bowls and put the salad inside. Sprinkle with olive oil, salt and black pepper.
Put the chicken on the barbecue (or fry it in a pan) until it's ready (70°).
